Summer Citrus Simmer Pot
Have you ever noticed how a smell can immediately trigger a memory? Fragrance is such an important element in creating ambience at home. For those who, like myself, are sensitive to artificial fragrances, simmer pots are a nice alternative to candles as they release a light, fresh aroma using natural ingredients.
First, bring a few cups of water to a boil in a medium sized pot. Once your water is boiling, reduce to a simmer and add your ingredients.
1 sliced grapefruit
2 sliced limes
1 teaspoon vanilla extract (or 1 whole vanilla bean)
1 tablespoon honey
1 ½ teaspoons whole cloves
2 to 3 drops of rosemary essential oil (or 2 fresh sprigs of rosemary)
As your pot simmers, add fresh water as needed to ensure it doesn't boil dry. For reuse, let your pot cool, pour the contents into a mason jar and store in the refrigerator. Stovetop potpourri can be reused for a couple of days before it starts to lose its fragrance. Enjoy!
