Spinach Quiche Recipe
One of my favorite go-to recipes throughout the year is quiche. Today, I’m sharing my favorite Spinach Quiche recipe. It’s simple to prepare, healthy and can be paired with many different sides depending on the season. My favorite pairings are baked sweet potato with cinnamon, brown sugar & butter or fresh tomatoes served with crumbled feta and drizzled with balsamic & olive oil.
Ingredients (serves 6):
15 oz bag of frozen, chopped spinach (thawed & drained)
2 cups shredded mozzarella
1 chopped sweet onion
4 eggs
salt & pepper to taste
pie crust (optional)
First, if you choose to prepare your quiche with a crust, grease your dish and place your pie crust. If not, crustless quiche is equally delicious! For this recipe, you’ll want to use either a pie dish or an 8 x 8 baking dish.
After your crust is placed in the dish, thaw & drain your spinach then mix together all ingredients. Pour mixed ingredients into your dish and bake covered at 375 degrees for 90 minutes. Remove the cover and bake an additional 10 minutes to brown the crust.
This recipe can easily be doubled to serve more people. I hope you enjoy this recipe as much as I do!
